About This Vineyard

To say Beaufort Champagne is organic is a gross simplification. Jacques makes his own compost from plant and animal sources. He avoids the use of copper and sulfur in the vineyard, as he believes they upset the natural balance of flora and fauna in the fields, using instead his own homeopathic teas and essential oils. Wines are fermented on natural yeasts, and each unique bottle is aged on its fine lees for as long as possible before disgorgement. This is organic Champagne of a pure, pre-industrial era; Champagne that few other producers have the guts to make. In short, real Champagne that is handcrafted, individual and precious—not to be repeated. Just 2,500 cases are produced each year.
